Like big golden medallions, saltfish fritters line Scarborough’s Caribbean counter-service food stores, steaming fresh out of the fryer. They’re one of our city’s quickest hunger picker-uppers, ready for take-out to eat on the road, down the street, or save for home.
Like so much of Scarborough’s culinary culture, fritters feed the lunchtime student, the worker on break, and the driving commuter on their way home. They are a perfect fast food.
Fritters are so quickly eaten, and so easily accessible, that you might overlook the long labour taken behind every batch. After soaking saltfish overnight, careful cooks pick out all the bones, and enhance the dough with fragrant onions, peppers, and spices. Every vendor expresses their fritters a little differently, their tastes fine tuned from big batches served at home for ravenous kids.
They’re salty yet light, crunchy yet decadent, and absolutely irresistible to anyone catching the aroma of fried dough and saltfish as it passes by.
There are a great many ways to make this dish; the video above is simply one version. If you search YouTube, you may find several from which to choose.
